Denmo’s Kitchen: Vegan Cashew Nog

Dairy and I had a talk and decided to break up for a little while. After the honeymoon, I wanted to cut out a few things and reset my internal system – no diary, no wheat, no sugar, or anything processed.

So I’ve been discovering the wonders of smoothies and creating the most delicious dishes with whole, organic foods. I feel way more alert, generally speaking, but I’m also super aware of my hunger levels and consciously taking the time to prepare and cook my meals so hunger doesn’t become a nuisance to an already busy day.

But that doesn’t mean I have to miss out on the joys of holiday feasts! This one is dedicated to my all time love for eggnog and is vegan friendly, gluten free, and sugar free. There are the natural sugars of dates in this recipe but no added sweeteners. Give it a go and let me know what you think! Tastes like the dairy boozy real deal of egg nog. Feels like the calm of dusk.

Cashew Nog

  • 1/4 cup cashews
  • 1 cup almond milk
  • 1 date
  • 1/2 tsp cinnamon
  • 1 tablespoon flax meal
  • Pinch of nutmeg
  • Pinch of cardamom

Blend in a Vitamix. Pour and serve with a dash of cinnamon. Serves 3 (½ cup each). If you don’t have a vitamix, soak your almonds for at least two hours then blend.
